"Whack 'Em on the Counter Biscuits

Recipe from Cindy via Real Food for Real People with Kaylin Cherry 

This is called "Whack 'Em On The Counter" because it's the same type of dough that comes in those little tubes that you --- well, you get the idea. It keeps 3-4 days in the fridge, after which it begins to sour but is still perfectly usable if you like sourdough bread. You can make everything from dinner rolls to donuts to pizza crust with this dough.

Mix together:
1 1/2 cups warm milk
1 cup unseasoned mashed potatoes 1/4 cup sugar
2 Tbsp. yeast (or 2 of those little packets - yeast is much cheaper in bulk!)
Stir until yeast is dissolved. Let sit in a warm place for 5 min, then add:
1/2 cup soft butter or shortening
4-5 cups flour  (half whole wheat & half unbleached)

Use enough flour to make a soft dough. Knead until smooth and elastic, then divide in half and place in large zip bags to store in the fridge.

To use, shape as desired, let rest 15-20 min, then bake in a preheated 400 degree oven until golden brown.
