Peach-Blueberry-Apple Crisp

Peel and slice 8 ripe peaches and 2 cooking apples into a greased baking dish. Add 2 cups blueberries.

Mix topping in a bowl:

1 cup flour (I used freshly milled golden wheat flour)
1/2 cup sugar, natural if possible (Recipe calls for 1 cup, but I use stevia for part of the sugar)
1 tsp. Nu-Stevia natural sweetener (found at health food store)
1/2 cup real butter (1 stick)
1/3 cup Old Fashioned rolled oats
1 1/2 tsp. cinnamon

Mix thoroughly with a pastry blender. Spread evenly over the fruit. Bake at 350 degrees for 50 minutes. Delicious and juicy! Let cool slightly and serve warm with vanilla ice cream.


Note about Stevia:

Since sugar breaks down the immune system, I try to use as little as possible, and stevia is a great natural substitute. Stevia doesn't work well when used completely in baking, but is fine to be used as a portion of the sugar. It is really good in drinks, natural applesauce, and many other foods. Give it a try! No calories and it is not an artificial sweetener. It's natural. And just a little goes a very long way.
