Peeling Potatoes the Easy Way

Boil a large pot of water.
Score Idaho potatoes around the "waist" with a sharp knife.
Put scored potatoes into boiling water and cook until tender.
Plunge hot potato into ice water.

Hold potato with a hand on each end, and pull off the skin.
It's like magic!
